Ingredients

  • 12 Eggland's Best eggs, hard-cooked
  • 2 avocados
  • 1/2 cup onion, chopped
  • 1 garlic clove
  • 1 tablespoon cilantro
  • 1 tablespoon lime juice
  • 1 tablespoon parmesan cheese

Preparation

Hard-cook eggs; when cooled, peel and slice in half, removing yolks and setting aside in a small bowl.

In a medium size bowl, use a potato masher to mash peeled avocados; add onions, garlic, cilantro and lime juice.

Use a fork to lightly break up egg yolks and add to the avocado mixture, blending thoroughly.

Using a spoon or pastry bag (or zip top bag with a corner cut off on an angle) add/pipe the guacamole into the egg whites.

Garnish with cheese and serve.
